BBQ Beef Ribs Recipe

Get the BBQ going, and get ready to fall in love with this tender and juicy recipe. It is sure to be a hit with everyone at the table. The BBQ ribs are cooked for several hours on low heat, which makes the meat fall-off-the-bone tender and juicy. Whether you grill it or smoke it, beef ribs are sure to become a favorite. The meat is incredibly tender, and the fat adds tons of flavor. These ribs are coated in a simple spice rub and smoked low and slow. You can also finish them on the grill for a bit of char. These ribs are best served with a side of your favorite BBQ sauce. 

Ingredients 

  • 6 meaty beef short ribs

  • 75ml sunflower oil

  • 3 onions , thickly sliced

  • 450ml hoppy Beer

  • 700ml good-quality chicken stock

  • 140g black treacle

  • small bunch thyme

  • 100g ketchup

  • 100g American mustard

  • 75g brown sauce

For Marinade

  • 2 tbsp cayenne pepper

  • 2 tbsp smoked paprika

  • 1 tbsp toasted cumin seeds

  • 2 tbsp garlic powder

  • 1 tbsp cracked black pepper

  • 6 tbsp sunflower oil

Method

1) The first step is to make the marinade. Mix the spices and salt into a bowl, then stir the oil to make a paste.

 

2) Rub the marinade onto the meat making sure to cover it all to allow the marinade into the meat to make it more flavourful.

 

3) Leave it in a place to chill overnight and the next day pre-heat the oven to 150c or gas mark 2. Heat some oil in a shallow pan and fry off the onions until brown. Pour in the beer to boil until it has reduced by half.

 

4) Place the marinated meat into a roasting tin and pour the onion and beer over the top of it then add the thyme on top.

 

5) Once the ribs have cooked (around 5 hours) remove the ribs from the oven and leave to rest on a cold plate. Strain the braising liquid into a saucepan and remove the top layer of fat once the liquid has settled. And whisk/ mix with ketchup, mustard and brown sauce.

 

6) Now comes the BBQ…heat your coals until ashen or with a gas bbq set it to a medium heat. Cook the ribs until slightly charred and hot all the way through. Then baste with the sauce. Set aside to cool slightly and serve them with sides of your choice. We recommend coleslaw, onion rings and chips
