
Perfect Smoked BBQ Ribs Recipe

Let's Start Smoking!
Step1.
Rinse the meat in cold water to prepare it for cutting
Step 2.
Trim the excess fat from the sides of the ribs.
Step 3.
Next you will want to add some salt. The rule of thumb for salting meat is ½ teaspoon per 1kg of meat. Ribs are 50% bone so about ¼ teaspoon of salt will do per 0.5kg of meat. Prinkle the salt over the top, sides and bottom of the ribs
Step4.
Leave the salted meat for around 1 to 2 hours, this process is called dry brining.
Step5.
Before you add the bbq rub seasoning be aware that some seasoning contains salt and can make the taste unpleasant. If the seasoning does contain salt then skip step 3
Step 6.
Coat the meat in a thin layer of water and rub in your seasoning. Use enough seasoning to coat the whole of the ribs. Spread it over and rub it all in
Step 7.
Preheat your BBQ/Smoker to around 225° or 107° (using a wood smoker would be more beneficial as you can use certain woods to enhance the flavour) and add your dry rubbed ribs to the heat. This process will melt the fat without knotting the proteins, and will allow the meat to become more tender
Step 8.
Allow the meat to cook for around 3-4 hours, once you have checked that they are fully smoked then add the barbeque sauce and serve.
